Title: 470k pots Vs 500k

Out of 500k LOG pots, is it going to make much difference using a 470k? or would I be better off using a 1M LOG bridged with a resistor? 

(its a MXR Noise Gate)

No, standard pot's value is very casual - tolerance is around +/- 20% (so the real resistance of 500k pot can be anywhere between 400k to 600k), 470k is practically the same thing.. If there was need for precise value (above standard) in the circuit, it would be noted somewhere around.
