 The short answer is "just like a MIDI keyboard." This sort of thing is covered in the beginning section of the manual/cubase tutorial/etc. I recommend you look it up there because Steinberg does a pretty good job of explaining their own software :) How long have you been using cubase?
 I don't use SX (I use one of the cheaper versions on my PC and ProTools in our school's studio), but the basic setup is as follows: I'm making it basic just in case you wouldn't have done one of the intermediate steps here; please don't take it the wrong way if you've been messing with MIDI for 20 years.

Hardware setup:
Guitar->GI-10
Midi out of GI-10 into the MIDI in of your soundcard or sound interface. You might have a card with a gameport (joystick connector), and you can get an adapter for that. If you have Cubase SX, you're probably running something better than a sound blaster live, so it probably has dedicated midi I/O in some shape or form. If you don't have a MIDI port, you'll need to buy a USB midi interface, which can be as cheap as $30 or so.

With that, you're ready to go.

Software:
Launch cubase. It should be configured to recognize all your midi interfaces. If you run into problems here (not likely), you'll need to setup cubase by hand and you will need to look in the setup portion of your manual or ask for help on a cubase forum (probably posting your system specs in the process).

Right click in the tracks list part of the main project workspace. Choose "add midi track" (it's called slightly differently if you're using SX1/2/3)

In the left-hand-side, you should have two dropdown boxes where you can select input and output from the track. Set the input to be the port into which you plugged the GI-10.

Set the output to be whatever you want to make noise - a VSTi instrument you've loaded (note you'll have to set that up too - press F11 and the rest should be pretty intuitive), or an output to a hardware synthesizer, etc. If all you want to do is record, you don't need to connect the output, but it won't make any sounds, and where's the fun in that? ;)

That finishes all the connections, from there you can arm the track and record to MIDI.

I have a GR-50 I use with Cubase and Cakewalk.  What problem are you having?

If your not getting any kind of input at all, the first step is to make sure the Computer and the interface are hooked up properly.  Midi-in to Midi-out, and Midi-out to Midi-in.

Once that looks ok, check that the GI-10 is getting a good signal from your GK-2 pickup.  If not, adjust the levels for each of the strings untill you get a good strong signal.

Once that looks ok, you need to edit the External settings.  I'm unsure what the setup for a GI-10 is, but on my GR-50 I can control two devices at once on one midi cable, over two midi channels.  Make sure you've got your midi output settings correct for that patch.  I used a Juno 106 synth to test that.  

On cubase you'll insert the midi track, set the input to Midi Omni, and finally record enable it.  At this point you should see cubase indicating midi events being received in the transport.  If you've got a VST instrument assigned to that channel as well, you should hear it sound.  Thats pretty much it.

i have this problem
my touch is clean and GI-10 is good have low delay (less than GR-50)
but cubase record a lot of little wrong short notes.
it's possible to filter in real time this short notes with cubase ?

You should try the forums at www.cubase.net since your problems seems to be with Cubase and MIDI.
