I'm looking to put a DIY cabsim between my amp and cab for direct recording and I'm curious how you go about that with or without a dummy load.

This redbox schematic

Shows the speaker out from the amp basically shorted to the speaker in from the cab. Can you just tap the signal in the same way?

Example: amp out jack connected to speaker in jack and attach the cab sim to the same connection or is the redbox schematic above missing things?.

Yes you can do that, make sure you include the R1 and R3 voltage divider to lower the speaker voltage to something that the cab sim will be happy with. If your amp has a line out check the schematic to see where it connects, it might be basically the same as R1/R3 so you can just plug your cab sim into the line out. Obviously in either case never plug in just the cab sim without a speaker or dummy load attached.
