It seems that most mosfet projects (boosters, distortions, etc.) use either the 2N7000 or the BS170/BS250.

There seems to be 100's of different ones around, I was wondering if anyone has tried others?

Yes, they have.

The reason those get used most often is that they're the most available, and usually the cheapest for a given level of performance.  That is, they're a relative sweet spot.

If  you'd like to use others, use others.

I regularly use 2N7002's, you should check them out for the Millenium bypass. They're surface mount, absolutely tiny!
If I could get smt resistors & diodes, the board would be about 10mmx10mm i'm sure!
I've used them in jack's mosfet booster too with no probs. kinda funny looking at a booster with no apparent active components!
