I've got several old and interesting pedals that havent been cloned and I'd like to draw layouts for to share here but the main problem is identifying caps that quite often have little or no marking on.  I'm not keen on de-soldering anything for obvious reasons but wondered if there was any other methods?

It's possible to make educated guesses based on the rest of a schematic...all depends on what the effect is though.  The type (material) of cap can narrow down things a little.

Pull them and measure them is the only way you're going to know for sure though (if no markings at all are on the cap...unless they have coloured bands?).

some have what looks like a resistance value ie 25r written on them and some nothing at all unfortunately.  There's some very standard values used in pedals I noticed early on so I would guess like you said, that you should be able to make an educated guess.  Wish they had resistor type markings though! :)
