I use disposable latex gloves, but only the hand that holds the solder.  Doesn't do much in the way of protecting against solder splashes, but that's never really been a problem for me.  I'm pretty sensitive to solder fumes (cough like hell) so it just seemed a sensible thing to protect my hands too (it's pretty easy to develop an allergy to rosin).

I saw on another forum the other day some kid who'd wired up some PUs into his guitar and splashed his eye lid.  Don't forget the eye protection folks!!
