OK, here goes. The first one is probably pretty basic, the second more tricky (but possibly idiotic ).

1) If I have a switch that has NO terminals as well as NC terminals, can it be used as an SPDT?

2) If I have a simple SPST switch, is there any way, e.g. by using a relay, I can turn it into a SPDT?

That would depend.  In my experience, switches that indicate NO and NC are momentaries.  You could certainly use it to actuate a relay for SPDT purposes, but on its own I don't think so.

Yes, and in fact many switching schemes use it in exactly that way.  Check out "The Tone God's" page on "wicked switches" ( http://www.geocities.com/thetonegod/switches/switches.html ) and RG Keen's page on relay-switching: http://www.geofex.com/Article_Folders/relays/relays_for_switching_audio_signa.htm

Wow, thanks for the speedy response. The NO.NC switch I have in mind is actually on the back of a pot, so I'm guessing it would not be momentary. What do you think....it's on fleabay:

As for the second response, that's great. I'll check it out.
