I was looking some info about piezoresistors, generally used in load sensors. I want to know if they are suitable, and affordable, for controlling a wah.

Search google for "force sensing resistors".
As usual, the easiest place to buy them are the amateur robotics places.

Gus ,Paul, thx. I google but not with that keywords. Also in alldatasheet and similar.

The ideal is a small sensor that can go up to 50k-100k when foot pressed.

Another option is this kind of sensor and drive circuit:

With some adjustment, output of drive circuit can be coupled to the gate of a fet which will be the real variable resistor.
