Where do you guys get foam or padding to put under a board to prevent it from touching the enclosure?

I cut up foam computer mouse pads.  They are cheap and can usually be found in a few thickness varieties to suit the space I need to fill.
If you're building or modding a DS-1, please check out my 'Build Your Own DS-1 Distortion' doc. Thanks!

I've collected some packaging materials and other suitable stuff.

Wal Mart or craft stores carry this stuff called "Foamies." it's a 1/8" thick, adhesive backed foam. Comes in 8.5"x11" sheets for like $.88.

I use it for my box bottoms, and for the bottom of my boards, sometimes.

I will also just use 3M double sided tape (the thicker stuff) as a way to mount the pcb to the enclosure. No shorts, and it sticks very, very well after it cures.

I use it too.  For that matter, sometimes when you buy a motherboard or videocard, the board itself may come in a mylar antistatic bag, but the thig is wrapped in a piece of foam to prevent it from bouncing around.  I use that foam too.  Heck, cheap foam underlay for carpets can work too.  Just don't use conductive foam that your chips come in.

i cut a square the same size as the pcb, into  a soft plastic container like ice cream or margarine and tape in under the pcb so the solder spikes don't short on the casing or pots.

Yo

I use weather stripping from hardware stores. Adhesive backed. Only comes in strips though.
