Is there something relatively simple I could build to convert Line Level audio to Instrument Level audio?

Thanks for any help!

Just use a potentiometer wired as a volume control. Something like 10k or 100k should do the trick.

Your "instrument level" signal is converted to "line level" anytime you run it through just about any pedal on the market.  If you have a buffered-bypass pedal (Boss, Ibanez, etc.) then you're taken care of, even while bypassed.  If all your pedals are true bypass, you can just tack on a simple buffer to the end of your chain, right before it goes into whatever device requires a line-level input.  Additionally, if all your pedals are true bypass, but you leave one on all the time, you are taken care of.

FYI, "Line level" usually means a low impedance output, with high current drive (such as the output of nearly any effect), and "low level" or "instrument level" usually means passive, high impedance outputs, with very low current drive (long cables degrade treble).
