I'll keep it brief: What current rating do I need for the transformer if I want to power 4-5 pedals at once. If you have the time, can someone provide a mouser link?

most pedals nedd 20 to 50mA, but some digital pedals need up around 100mA.
For a typical rack of 4 pedals, I'd use a 250mA supply, just to be on the safe side.
