Replace both resistors with pots or a dual-ganged pot or or just R44 (larger value here would mean more output volume?)?

No, the 2 resistors form a divider with output taken from the center.
Put a 5k pot in their place with the wiper connected to where they meet and each end of the pot to where each resitors other end were.
I think I just increased the gain of that opamp on mine....but I can't remember what I did because I had to replace a bunch of parts since it was severely corroded due to water damage.
