It's not ideal but I've always just taken a marker such as a sharpie to the board to make grounds bigger.

Sorry for another bump, but I don't get a lot of time to work on it, so I like to try and get stuff done when I can  :)

Ground plane -



Would this be a better alternative to what I had before? Is that bit coming up of the right end of the long line of horizontal holes through the ground plane over kill? That little square bit coming off.

Ideally you'd want more coverage than that - better than nothing though. Also the pads now covered by the plane should have thermals or they'll be hard to solder.
