If I accidently took off too much copper off of the board while etching, can I use solder to just remake the path?

I'll usually drill 2 holes and wire it. Then, I glue the wire to the board.

It depends on how bad the problem is.  If you have just a few gaps you can bridge them with wire (the cut offs from components works great).

However, I would recommend having a good hard look at the board to be certain that you are not asking for trouble down the road.  If you have a lot of very thin traces, you may lose connectivity later on.

Be certain to examine the toner transfer before you etch and repair any problem spots with a Sharpie or something like nail polish.
