Im looking for a pedal that will hold whatever note I am playing while I have my foot on the switch, and then release it when I take my foot off. I've seen the EHX freeze and know this is digital.....is there any analog or DIY or cheaper options available?

A delay with high feedback so it rings on combined with a volume pedal in front of it. Then a mixer combines the dry signal from before the volume pedal and after the delay. If you go look at David Gilmour doing an acoustic version of Shine on You Crazy Diamond on youtube he has a setup somewhat like this.

The old Boss DF-2 Super Feedbacker and Distortion will hold a synthesized note at the same pitch as what it detects for as long as you hold the foot-switch down.  You can even use it as a drone-tone and keep playing over it.  Behringer makes a cheap clone of it.

Just be aware that it is a monophonic device, so chords are out of the picture.

You can DIY a digital freeze effect, but if you're starting from scratch you couldn't do it any cheaper than the EHX.
