Any reason not to try 1N5821 Schottky Rectifier diodes in my OD/Boost?

Accidentally ordered them and don't know enough about what they do or sound like?

grainy and dark... go for it!

They work great for polarity protection too.  I always add one to every build that doesn't have polarity protection.  In serial with the V+, the voltage drop is low enough that you don't lose significant voltage.
