Mixing MN30XX chips?

I'm guessing that the answer is yes, but can MN3005s and 3008 be used together, like in a Dlx Mem Man?

Yes.  As long as you are not mixing different clock frequencies, the overall circuit doesn't really care how many stages are to be found where.
