I have an idea of a pedal that requires 8x8 dot matrix LED panel for easier LFO control.
I have some of these at home:

Does anyone know a good way yo mount these on enclosure or could suggest different part to make "display"?

Cut a square hole with either a jig saw or drilled holes and file.
Would look neat I think.

This is my last option. I'm looking for something neater - for example a plastic frame that would cover the edges of the filed hole.

I believe they make something like that for digital panel meters, but this would be for a small four- or five-digit display.  You could always use a small picture or photo frame.
