Check out Amp Maker in the UK.  They carry many of the parts you'll need and they ship to France.

Hi, thanks for all your responses. I've taken notice of all your advices. I do realise I am not as experienced with big amps than with pedals. My plan is to take it very very slow, get one thing built then go to the next. I guess buy cheap amps could be an idea, but getting the right parts in the cheap amp is just a matter of luck if I don't know what I'm really buying.
Anyway, I'll go and have a look for that french bloke you talked about.
Don't know what to do with a paritculare transistor? Check this website where stompbox pedals are listed by what transistors they use

It may seem like nothing, but 1W and 2W resistors have nice big, long, sturdy leads, that can be helpful for stradding the distances that point-to-point can involve.  They don't cost that much more, and they may not be necessary electronically, but those leads provide a major convenience.
