So I've got a pedal power supply that would have used a wall wart that supplied 18v/1a.     Can I safely use another wall wart that puts out 18v/2a if the tip & polarity is the same?

Thanks in advance.

Probably.

You have not said AC or DC, or if both are the same.

I'll throw caution to the wind and say yes, and just skip all qualifiers, exceptions, what-ifs and what-nots. You know what you're doing.
Upping the amperage - is that your concern? Fret not.

Power supplies don't "put out" current.  Circuits consume what current they need.  You'll be fine with the overspecced wall wart.

Just an almost off-topic add...

Wallwarts of higher current rating tend to have lower ripple voltage for the same output current ..
