Hi-

  There is there any tonal properties associated with PNP vs. NPN circuits or is it just about polarity?  Why would someone choose one or the other?

It is just about convenient polarity.

There are deep-deep differences but nothing which matters in audio design. Even the "it can be shown" notion that the best PNP has lower hiss than the best NPN has never mattered in practice.
