Hello, my TC Electronics Eyemaster pedal gets kinda muddy and loose with high output pickups, but if I lower the volume knob on the guitar it gets tighter and crunchier in a very good way :D The problem is that some of my guitars don't have a volume knob...

I would like to add a second volume knob, so I could adjust signal going into the pedal, but is it even possible? Because whole pedal has a switch and input/output soldered into the board.

I am total noob, so talk to me like I am five :) I can solder some cables and a pot, but not much more.

There is already topic about modding this pedal, but it's about adding Hi/Low knobs: https://www.freestompboxes.org/viewtopic.php?t=30392

Why not add volume to guitars — is a very useful feature.
Also, it is not necessary to turn the gain 100%, all the time.

I have a guitar with a stone top (made of granite), it's nearly impossible to drill a hole in it :( Second has no knobs and I want it to stay clean.

Why not just put a volume control pot in a small ABS enclosure and wire it with a jack plug and short lead to the guitar and with a jack socket to plug your normal guitar lead into. A bit like some of the early small boosters that plugged into the guitar output socket.

Or something like this:

You can actually get volume (or swell) pedals ready made.

Well it just depends on your definition of DIY and that applies to many things in life, not just stompboxes.
