try using all six inverters and just puttin between a 5X and 10X gain on each one.  nice and creamy.

How do you set the gain on the inverters? Do you treat it like an OPAMP stage and use a input resistor and a feedback resistor?

Yes, you can treat each stage as you would a inverting op-amp, i.e. feedback resistor and input resistor.  The gain of each inverter is also low enough to simply use a feedback resistor on its own for subsequent stages - the previous inverter's output resistance (whatever that may be) acting as the 'input resistor'.  

Inverters have high output impedance, which will increase as supply voltage is lowered, so you'll often see large value feedback resistors used in these circuits.
