I was thinking about making this my first build...I am curious though...is this a foot pedal or mini-amp like the smokey?

Often, the switch is omitted when drawing schematics since it is nearly the same for every effect. GeneralGuitarGadgets.com and AMZ both offer comprehensive bypass switching diagrams. Also, GEOfex.com has an informative article about wrappers - the parts common to nearly every effect.

Are the FET-based amp emulators used differently than other pedals?

No, they're regular stompbox circuits. Use them in the same manner as any pedal.
