Dumb question, but still learning. Potentiometer lugs...what's their function?

I'll use a Small Clone clone as my reference point because that's what I've been working with lately.

Coming of the board there are three wires for each pot (Speed and Depth). Let's label those wires S1, S2, S3 and D1, D2, D3. Obviously the wires correspond to lugs 1, 2 and 3 of the appropriate pots. If S1 and D1 are ground, what are the functions of the other wires/lugs? It never occurred to me to ask until I started trying to modify circuits and layouts. Thanks for the patience, understanding and help.

they are variable resistors,  you can wire them so that when you turn the pot UP you get more resistance say 500k or when you lower it it goes to 0 ohms the wire that goes to lug 2 is easy to figure out but when you have lug 1 and 3 you gotta make sure they go in the right one cuz you could get more SPEED when you turn it to 0 and less on 10
