Expression Pedal for a pot that uses 3 wires

I've done searches concerning adding expression pedals and from my understanding it's very easy to add to a pot using only 2 wires.  I am looking at building the analog delay project from tonepad ( http://www.generalguitargadgets.com/diagrams/ad3208_lo.gif ) and wanted to see how I would go about adding an expression pedal for delay level and/or repeats.

I found this pdf:

that explains how to do it for 2 or 3 wire pots but would this work for the ad3205?  Am I right in guessing that the pots would have to be turned all the way up for the expression pedals to work or would it just bypass the pot?

Also, in this article  ( http://www.geofex.com/Article_Folders/xprnped.htm ) the author list using a LED/LDR to control a 3 wire pot, is this a case of that?

Could you explain.  As far as I understand it, you use stereo plugs for all expression pedal mods because the signal travels to the pedal on the "Tip" and returns on the "Ring".  My questions concerns the wiring for the pots.
