How to distinguish the good, the bad and the valuable

Hrm..
I am having problems with classification of components because I buy and pick-up anywhere.

So I searched and found this topic :

But this did not answer my questions.

How do you guys keep « track » your "Type" of components?

Do you mix  vintage , NOS , new  and  surplus  in the same box with incremental classification ?
Do you put labels?
Stock archives ?

Should I keep in mind that stuff bought in surplus store might have large tolerances and keep that away from the « GOOD » stuff.  Do these might have some defaults?  Or be valuable?

Do vintage ceramic disc, metal film caps, resistors XX type exist and should be kept together for building more exact replicas of old effects ?

What do old mystique stuff can be recognized from the more traditional ?
How do those look like ?

Is it worth thinking about that ?

One of the components that I have bought in a assortment pack, that I think of, is this one:
I think it comes from the 70's (not sure).

Its two capacitors in one ceramic disc with three leads.
How do that component work?
What can you do usefull with it.
do the two capacitors influence each other?
Is there some effects that use this kind of double cap ?
