Differences betw. 4049UB and 4049UBE (or 4049 UB SMD)

About to build red llama and the ic required is 4049UBE but the local shop has only 4049UB and 4049UB SMD, can I use those ones?

Yes, they'll work.  The UB part of the code is all that matters (in this case).  However, SMD means surface mount, so unless you have experience working with these tiny little things, best to go for the other one.

While we're on it, is there anything I can use a 4049 buffered on?  I accidentally bought some a while back and I've had them sitting around ever since.

You can probably use them for buffering the clock lines between the clock generator and a delay chip, or for producing a high-frequency clock itself.  The buffering part is really only useful if you plan to drive a busload of delay chips to achieve a really long delay time, or if you are trying to drive one BBD super fast to achieve more dramatic flanging effects.
