What kind of polish is recommended after adding the clear coat? Should I also sand it (2000 grit wet) or just give her a quick polish and be done with it? I used Duplicolor Automotive clear if that matters.

You could do either, or none of those, guts.
I get good results using several light coats of clear coat and just leaving it as-is.
But, like in auto body work, you could wet sand it a little to gloss it up.  Maybe try it out on something non-critical?  There are a few different ways of polishing...using oils and pumice, etc etc.

Thanks Gibson. I hand buffed it with some "auto rubbing compound" and a buffing pad. It got rid of that orange peel look the clear coat had. So it's a little more smooth now, far from a perfect finish though. I use this pedal enough that it will be beat up pretty bad in a few weeks anyways.
