Do the numbers go like:

  | |
  | |
=======
|1 2 3|
|1 2 3|
=======

or:

  | |
  | |
=======
|1 2 3|
|3 2 1|
=======

any help is much appreciated ^.^

The first one - the wipers on each pot are mechanically coupled, so when you turn the first pot clockwise you are gonna turn the second pot clockwise too unless you have some crazy gear scheme. As far as the direction of the taper (if thats what you are asking for) you'd have to check the manufacturer specs.

Pots are pretty simple devices.
It's not so much the way they are numbered, it's how you wire them up that matters.
The numbers are for illustration purposes only.
Think electrically and you'll be able to sort it out for yourself.

Deception does not exist in real life, it is only a figment of perception.

Here's a great article about understanding pots:

http://www.geofex.com/

Just search pots then read the article "The secret life of pots"

I'd actually recommend you read and understand everything on this site.. a valuable resource! Thanks RG !

Classic 2-wafer dual-gangs are like your first drawing. That's the only way that makes sense for Stereo Volume Control, the classic use of dual-pots.

BUT: the smaller Panasonic dual pots put both tracks on one wafer. Then to get the wipers out to the terminals, without crossove, they have to use an odd pinout:
