Is there a good way to make an LED's intensity vary with the audio input signal of a pedal or other device? Louder signal = more intensity.

Is it possible to do it with a dual-gang volume pot?   one gang for the vol and the other to change the resistor on the led.

Unfortunately, I think the problem would be that the vol pot would probably be much higher. You would need a dual gang that's 500k / 10k, which either doesn't exist or is very expensive.

If you used a 500k/500K with a 10K across one gang, you'd wind up with a poor non-linear sweep.

How many pedals have 10K volume pots....
