It is remarkably similar to the old DOD switching setup using that CD4007 chip, I think.

Yeah if it's the CD4007 then that's an easy replacement. Tayda has that exact same chip for cheap (I've got a pile sitting here in my gooidies bins). Good call, RG!

Is there a common fault in that type of design , do you think...?

I've just ordered a CD4007 chip for the equivelent of about $3 so fingers crossed!
It the meantime is there some way I can test the original to be sure it's DEFINATLY the culprit?

which is like what is used in the DOD pedals and might be the same or similar to what's being done in the NuX pedal.

I searched google for "cd4007 stompbox switching" and this was one of the first hits that came up. You might start there.
