Has anyone heard of such a tool or know of a search term that might help to get one to surface ?
the 5/8'' centerbit has to be 5/8'' the holesaw needs to be about 1-1/8'' ID.

Not exactly. But I'm trying to figure out what you're trying to do to see if I can offer some suggestions.  Are you making a new hole that has some concentric 5/8" ID and 1-1/8" features.  Or are you trying to make a 5/8" dia hole 1-1/8" dia?

Clamp it to hard maple. Mark the center of the 5/8. Now use any 1.125" holesaw you have.

many of the hole saws use a removable 1/4" drill bit for centering, you might be able to find a 5/8" bit on a 1/4" shaft to use instead of the 1/4"
