What is your prefered method to isolate pots from board inside a pedal?

The pots Tayda sell have little plastic dust covers on them, so no need to insulate them.

I cut a neat rectangle from an ice-cream tub and stuck it on there with hot glue, then the board on top of that.

I don't.

I normally buy pots from Tayda, and I should point out that Small Bear sells the dust covers individually. But in the past, I've used the rubber feet that you normally put on the bottoms of enclosures.

The plastic backs on the pots are helpful that way, but they also take up extra space that some pedals may not be able to accommodate.

Electrical tape does work, but the adhesive decomposes faster than bands break up, or girlfriends of bands leave.

I like to use this stuff I get at hobby/crafts stores that often goes by the name of Fun Foam.  It's the thickness of about 15-20 sheets of paper, easily cut, and can be fit into tight spaces easily.  Probably lasts longer than the foam found in older MXR and EHX pedals.  And if you need to get access to the pots to mod or repair or reqire, it is easily removed...unlike tape that has gotten goopy under the lights, or back of the van with the windows sealed during the summer.
