Hi

I'm afraid you can't do reversed polarity using that sort of foot switch, it is open when not pressed eg: the pins are not connected and closed the pins are connected, however you wire it up that's all it can do.
You need a momentary single pole double throw (SPDT) foot switch, or a momentary double pole double throw (DPDT) which is probably easier to find. Something like this http://smallbear-electronics.mybigcommerce.com/alpha-107-sf12020-m-dpdt/.
This has three contacts like your toggle switch, 6 if it's DPDT but you only need three of them. From the middle lug to one outside one is normally open and to the other one is normally closed.
Wire the two outside lugs to the two outside lugs of your toggle and then wire the inner lug from the foot switch to one lug on the jack, doesn't matter which and wire the middle lug of the toggle to the other lug on the jack.

Hope that helps :)

Brisance

jellybean mosfet + resistor = logic inverter, so it actually can be done.
