Hello guys.

I bought a 24 volt transformer for
my "Ultra Clean 9v Power Supply"  project.
On the other side of the transformer opposite
the terminals you connect to the mains,
there are 3 terminals labeled 24v,0,24.

I tapped only the left 24v and zero and seems to work fine.
But do I have to connect to both 24v terminals?

Does that makes sense? Not very fluent in english.

That's ok, you could use the other terminal to create a negative DC voltage, for a bipolar power supply for example.

Can't you get a transformer with a lower secondary voltage? 24V is a lot more than you need for a stable 9V supply (it will be around 30V DC after rectification), so the voltage regulator will produce a lot of heat, make sure you use a heatsink!

24 volts is the one listed in the bill of materials.

I'm planning to use it to supply about five guitar effects
all (including the power supply) in one enclosure.

I think if you use the two 24-plugs, and wire the 0-one to the ground, it will be more silent. If I'm right, it is a center tappet tranny, so it will make the ultra low noise supply even more ultra silent, if I'm right.
