In this project..--does it really matter which of the 3 I choose? These are from small bear.

Anyone build this ? Opinions?

I've built this (and the stereo version too I think) and I'm pretty sure I used homemade LED/LDR combos that worked. I'd say try the cheap ones first and if they don't work use the factory spec ones (order both and save the ones you don't use for another project).
