If I want to convert the mono out of a preamp to an XLR out, can I just use a 1:1 transformer?  Is it as simple as sending the mono out to one end of one side, the other to ground, and then the other side of the transformer is the two "hot" leads of the XLR jack?  Thanks.

Sounds reasonable, provided the transformer has the right characteristics. But, keep in mind that electronic balancing has several advantages over transformer balancing, not the least of which is cost.

IIRC, the Acoustic 360 preamp has a balanced output:

Is that what you're after?
Cut it large, and smash it into place with a hammer.
