Is it really necessary? (i have a stabilised adapter)
What is the recommended value?

Should i use only a cap or a more complex filter?

Any suggestions?

filter cap is good for removing hum, from dc power.  It is also good, becuase you might not have hum now, but my play out and get hum, the filter cap will help that, i always used a 100uf cap to ground, but i heard others using a 220uf cap to ground in wah, the gCB-95 uses a 220uf cap, i just happen to look at one,...  :icon_wink:

at the moment i have NO filter cap in my wah, i am still tweaking it, but i will soon.

100u is just fine. Should you still have problems (perhaps a very poorly regulated wallwart) increase to taste, but I've never ever had to. I usually stick in whatever's handy and 100-ish or higher. If you want to go really over the top, use a very heavy one (1000u) and bridge that with a 100n poly cap. Not at all necessary though.
Polarity protection is always a good idea. A series diode will drop voltage, a diode to ground will fry when you reverse polarity (or fry your supply) and after that offer no protection. This is (a lot) better:
