i've noticed that most knobs have a 6.3mm shaft size, will most pots fit this?

6.3mm = 1/4". Most of the Alpha pots you wiil find have 1/4" shafts so you will be ok.

I don't think a "most" can be derived. Pots usually come in 3.18mm (1/8 inch), 6mm, and 6.25mm (1/4 inch) shaft sizes. Maybe in the pedal world the 6.25mm is more common for durabilty reasons. Check on what ordering ahead of time.

6mm seems to be increasingly common, in my experience. It's not a bad idea to buy pots & knobs from the same place, so there is less room for argument if they don't quite match (although this is less likely to be a problem thatn power plugs and sockets, for some reason).
