Photocoupler Help - Need Some Opinions ~

Hello!

I am going to build a remote expression control pedal, and I am looking for opinions on which Photocoupler (or ldr/led combo) would the best overall for this use.  ?  Which would provide the smoothest "tracking"?  I know Small Bear has a good selection...

Do I need to check data sheets for all of my options, or is there a general trusted item with a wide range?  I need to control a 10k setting and a 100k setting.  Is there something I could use with that range?  I'll be adding resistors or trimpots to dial it in...
