Can a pot be used in place of a trimpot (if it's the same value)?

For testing purposes is OK, but for a permanent build you will have another control to deal inside or outside the enclosure.

There is no problem having it as an external control if there is some parameter you want to access easily. An example would be the Bias control on the Analogman sunface.
