what do you use and where do you get them? i'm open to anything that will stick to the inside of my pedal and keep the board high enough off the enclosure.

  Check out Small Bear stock.
I use screws I find through the top of box, threaded into board, board gets thin HD plastic sheet which covers inside of top of box.
That or just a pen-tube section, squarely cut, seated to the board bottom, screw threaded into board.
Quick, ugly, effective ! No waiting, no trips to the store, nothing to 'buy'...
Another way is take a plastic tube portion from a monitor [taken apart, these plastic sections are threaded ID and tube shaped], square it really good, epoxy that to the inside box top, use a short screw through board threaded into tube.
Wrap it in non-conductive material, stuff it in, put stuffing in to pack it down...done.
None of these are 'technically recommendable' but work jes' fine for me all the time.
Convention creates following, following creates convention.

Nylon bolts and nuts. Compression between the box top and bottom holds them in place.
PCB can be set at any height.

It's time to buy a gun. That's what I've been thinking.

that's pretty cool! are they fastened/hot-glued to the bottom at all?

No, they are trimmed to fit tightly between the box and lid.
Once the lid is closed everything is squeezed nice and tight.

I also line the lid with 1/8" kraft foam. That gives the bolts something to compress into.

I suppose you could glue them in but I don't see the point.

3M weather resistant double sided exterior mounting tape.  The grey tape with the red backing.  It works great. I put two layers on the back of the circuit board and stick it to the back of the pots.  It's way more pliable than the white foam double sided tape.  And the adhesive is really, really, really strong.  You can remove it with some effort if you have to though.

I've been trying 8/32" pan head screws and lock nuts with nylon inserts. Nice thing is they are very easy to find at the local hardware store.

I drill a PCB to fit on the screws, then I fasten the screws to the PCB with a nut on each side so it can be suspended away from the head of the screw. Then I JB Weld the head of the screw into the enclosure. Quick and easy, I'm sure someone else already does this.

It's late, and I'm not sure if I'm making any sense, so I'll draw this elaborate diagram to demonstrate my simple principle:

ll screw head    ll
ll V                  ll  V other nut
ll--              --- ll---
ll  l///////////l   lll    l////
ll  l///////////l   lll    l////
ll--              --- ll---
ll                 ^  ll < warped PCB
                  nut
^ back of enclousre (wall)

I'm sure that was unnecessary, but it was kind of fun :)
