Quick Simple Grounding question

So basically to have more room to ground things I would add an extra strip. I can't see why this would not work but I wan to be sure.

Your question doesn't seem totally clear, but...
As long as you are working with small signals, and not power signals or power supplies, then yes, you can lengthen an earth line or "bus" by any means, including a bridge between different strips, or a whole board of earths (an earth "plane") or whatever.

sounds unnecessarily overcomplicated. all you need to do is layout your circuit so all grounded components meet at a common "rail" and send one wire from your circuit board to the input jack, tie all your pot's chassis together w/ a solid wire and ground them to the input/output jacks and maybe ground your switch. done!
