I use a part of a different value then specified. For example if it calls for a 50uf electro and I use a 47uf? or a 33pF instead of a 30? In both cases it's only like 6% and 10% off.

I certainly wouldn't worry about differences that small, especially with caps.  Capacitors historically had really awful tolerances, and electros are particularly bad.  I think within 20% is generally safe for most caps in the sorts of circuits we build around here.
