I don't see why this substitution should be a problem but I don't have adequate knowledge to say for definite. The pin out is different so it certainly wouldn't be a direct sub into a PCB or layout. The layout would need changing to cater for the new pinout.

I have never used the 4069. I suppose if it is a replacement for the CD4049UBE it should be fine.
Yes, it does a lot of distortion and sustain for sure.
