So I want to build a fuzz.  I need recommendations on a good build.

I know its an open question but here are my Prerequisites:

1.  Has to be easy to control - i.e. not one of those with 5 knobs!!
2.  Absolutely LOVE the sound of the this clip http://www.olcircuits.com/audio/olc_chunkycheese_mode1-1.mp3
3.  not concerned with the level of difficulty with the build - hehe I like a challenge as frustrating as debugging can be at times.

I would build OLCIRCUITS Chunky cheese as above but well I want something with a smaller footprint. - real estate is limited on my pedal board.

If you have sound clips that would be helpful.

Thanks in advance

There is another layout for that pedal that will go in a smaller enclosure.  I just cant remember where I saw it.  I think it might have been Nelson's site?

If you search for Nelson you should turn up his site and I think he has a link on there.
Try a little tenderness.

ROG whisker biscuit. Relatively small foot print fits a 1590B, sounds good and is versatile

It'll have boost, and the distortion will be caused by one of the various distortion causing methods:
  clipping diodes
  distorting transistors
  other methods...
once you get that going you can probably tweek something useful from it.
  Above suggestions are good ones.
FF of course always gets suggested, for good reasons.
Dist+ is example of diode to ground [hard clipping circuit]...many brothers, sisters, cousins [dod250, blue clipper etc.]..good circuit..stick the boost in front [if the pickups not super hot] and it's more toward the 'fuzz category' tone.
For me, Hard Fuzz...is a Fuzz, but starts with a regular old boost.
Nice speaker/cabinet, nice 'little' tube amp...I can't recommend building the latter but can recommend it for you fuzz building/tweeking.

imho the ram's head version is sweeter. though I would call both nasty rather than sweet.

The SMOOTH control is very versatile. Smooth OD fuzz to buzz saw.
I posted a p-2-p layout for it that super easy to build into a 1590B.

What transistors do you have?

It's time to buy a gun. That's what I've been thinking.

dragonfly's montezuma is awesome and easy to build.  He also has a number of fuzzes, including one knob fuzzes on his page:
