how does the memory lane 2 use a tap tempo on an analog delay?  is it all still analog?

I don't know but I can guess: it uses a small logic circuit to detect the tap rate, convert the rate to a resistance value and set the value on a digital potentiometer.

Yes. At least: the audio signal path is analog. They are likely using digital control logic.

so it's not necessarily a very easy thing to do yourself.
