Im sure this is a silly question, but do these 2 jacks represent the typical input and output jacks we use around here?

SWITCHCRAFT #11 ... 1/4" single, open (non-shorting).

SWITCHCRAFT #12-a   1/4" tip shunt or shorting jack.

What's the difference between these 2 jacks?

I don't know if this answers your question, but 12A shunts (grounds) the tip when a plug isn't inserted.  The 12B is typical of what we use for input jacks.  A mono jack is typical of output.
