Ive been advised to make some kind of blend/loop/switch pedal but only see a couple of simple circuits around. Is there a project for something ultimate, with the most switching/blending/looping options?

You've been advised to make one, but what do you actually need? "Ultimate" can't really be quantified - someone could always add one more loop and one more switch.
Bringing you yesterday's technology tomorrow.

I miss phase invert on my blend pedal.

True...'ultimate' should include some sort of function that sources, buys, imports, roasts, grinds, brews, and pours the best coffee I've ever tasted, as a start  8)

My brother wants me to build him something.
He told me a little bit about it a year or more ago, mixing 3 sources at the guitar [accoustic pickups and microphone], then this complex looper/looping routing...he was probably doing a good job describing it in words, had I taken notes I might actually have been able to envision all the board patches etc., what it does and doesn't do when...
I said "we should draw up a fresh block diagram, and think through what the routing and switching options you've chosen provide you, perhaps re-draw".
"Ultimate"...does exactly what you want in a most effortless, readable, predictable and reliable manner, not necessary that it have anything else.
Preferences such as 'juggling' or 'linear chaining' are a personal need type of thing.
extra jacks or complex internal switching.
Just defining the requirements of discussing complex routing...there's a lot to think about.

GEO has all kinds of info on routing and related info..

The Boss LS-2 is pretty versatile, it can be an ABC switch (1 in to 3 outs, sequentially, or vice versa) and can also switch between bypass and a blend of the returns from two effects loops.  The latter is what I most use it for, and have thought about re-creating.

I think i had a bit of confusion as i didn't even know what these pedals where capable of, so im guessing they are used for:
-Blend two/three signals into one
-A/B jumping one source to the other
-A/B/Y one or other or both
-Phase inverting
-Bypassing an effects loop
By asking for ultimate i wanted all the features you could get then id stick them in one pedal,
All ive got so far is 3 in 3 out with blends and phase invert A/B/C/Y
The musicians friends selection doesn't seem that complex, but i guess you could go as complex as the 4ms bend matrix http://www.4mspedals.com/bendmatrix.php
